We flood the floor for 48 hours and watch the ceiling below. If it fails, we redo it while it is still accessible. Testing after tiling means breaking a finished floor.
Not with a spirit level — with a bucket. Water should reach the drain in seconds and leave no puddle. A bathroom that ponds will stain, smell and eventually leak whatever membrane is underneath.

14 to 21 days. The parts that cannot be compressed are the waterproofing cure and the 48-hour ponding test before tiling. Anyone promising a bathroom in a week is skipping one of them.
Within limits. Moving a basin or shower is usually fine. Moving the WC significantly means changing the drain connection to the stack, which needs association approval and is often refused. We check this before quoting rather than after.
Yes. Lifting the floor destroys whatever membrane was under it. Retiling a bathroom without re-waterproofing is the most expensive shortcut in home renovation, because the damage appears in the flat below.
Then you need somewhere else to be for roughly a week of the 14–21 days. We will say that plainly rather than pretend the bathroom stays usable — it does not, once the floor is up.
